For the exchange collection:
We do not have an official exchange collector. As a workaround, you can configure a new ADC collector to collect user emails from Active Directory as an entitlement and link it with users.
For Exchange Connectors:
Find the attached documentation of the exchange and the exchange PowerShell agent connectors.

Here, the client needs to collect details besides mail ids from Exchange server, such as whether WebMail, ActiveSync etc have been enabled. If there's no way to do this, can you assist me with creating an RFE?
Also, during account creation or modification using connectors, how can paramters such as WebMail, ActiveSync, mailbox size etc be set?

Unfortunately, there is current way to collect data such as WebMail , ActiveSync ... . I'll open a case for you and will begin the process of the RFE.
For account creation and modification using connectors, the best way is to add an SSH Microsoft Exchange 2010 connector and type in the command code field the PowerShell commands to update or create accounts.
Attached to this post is an example of the 'update a mailbox' capability in the SSH Microsoft Exchange 2010 connector. The syntax of the parameters and the PowerShell commands are not correct in the screenshot. It would somehow look like that. Creating a mailbox would be configured from the create a mailbox capability and would be configured the same way as the 'Update a mailbox' capability.

From your response, I gather that:
1. Exchange details cannot be collected, but connectors work
2. As a result of the above, what I understand is that connectors can be used to provision Joiners, leavers etc. but access request does not work (not sufficient details collected to either create requests or check fulfillment).
Please correct me if I have understood incorrectly.
