You basically need to burn a DVD from the version .iso, boot it and install the version, then patch / update to what you want or need. We call that a 'factory reset' because in version 7 they allocated a partition on the disk with the original image which you could reinstall by clicking a button in the Operations Console, but that meant every time you upgraded, you also have to upgrade a second time to the factory reset partition.
I think you might need to get the AM 8.1 hardware .iso, If I remember correctly there was no base AM 8.1 SP1 for VM or hardware, only for HyperV. So you'd boot and install 8.1, upgrade to 8.1 SP1, then apply patch 9 (or I'd recommend Patch 15, it was the latest 8.1 SP1 patch)
If this is a new Dell, the old 8.1 re-image may not recognize the old hardware specification, and will not install. 8.1 appliance re-imaging only works for specific make/model/version/hardware appliances that shipped back when 8.1 was the current version of Auth Manager. You best bet if this is the case is deploy 8.1 into vmware or hyper-v.
